- Gualtallary. A 1,100 masl vineyard, over highly calcareous alluvial soils. High density plantation (7,000 plants per hectare). To make this wine, we’ve selected a patch of land, a polygon inside the parcel.
- Harvest and winemaking
- Early harvest, by hand in crates, with bunch selection. Simple winemaking process, using indigenous yeasts and 30% whole bunches, light pumping over in a concrete egg, and 12 months aging in second passage Boutes oak barrels, leading to a vibrant and tense wine. Unfiltered. Les Calcaires is the expression of a cabernet franc in its best terroir: high altitude calcareous soils.
